Pork Strips with Lime Peanut Sauce

This is incredibly good although it is time-consuming to prepare. It is delicious and pretty enough to serve to company. It tastes like something you could get at P.F. Chang's!




1. To make peanut sauce, combine first 11 ingredients in bowl--dissolve peanut butter in hot water first, then add the rest.


2. Saute vegetables in 2 tbsp peanut/vegetable oil to desired tenderness; remove to bowl. In same pan add pork (add more oil if needed) and cook until lightly browned. Add peanut sauce and stir to coat. Bring to a boil and boil one minute.


3. Serve vegetables and pork in peanut sauce over cooked rice with garnishes.
